BASIC WHITE BREAD
Basic white bread
Ingredients
Setting: Basic
Ingredients
1.35kg - 1.125kg -900g
Water 460ml- 400ml-330ml
Margarine or butter 4 tbsp- 2 ½ tbsp-2 tbsp
Salt 2 ½ tsp- 2tsp-2 tsp
White bread flour 5 ½ cups-4 ½ cups-4 cups
Sugar 3 tbsp- 2 ½ tbsp-2 tbsp
Dry milk powder 4tbsp--2 ½ tbsp -2 tbsp Dried active yeast
1 ½ tsp--1 ½ tsp--1 ½ tsp
Directions
Weigh flour and set aside
Next measure (use the correct measuring equipment) the water and margarine/butter into the pan.
Add the salt and the flour, which will create a barrier between the wet ingredients and the yeast.
Add the sugar, dry milk powder and lastly the dry yeast on top.
Place pan into machine
Set the program to basic
Set the size of the loaf 900g, 1.125kg or 1,35kg
Set desired crust colour light, medium of dark
Close the lid and press start
Do not open the lid while bread is baking
When the cycle is finished, the machine will beep and the bread will be ke[pt warn for 1 hour. For best results, remove from the pan immediately and allow to cool on a wire rack for 20-30 minutes before slicing. If sliced straight away, escaping may cause the bread to become soggy.
Chefs tip
Should you wish to have the salter bread add ½ tsp to the recipe, if you wish to decrease salt contents decrease by ½ tsp.
Half of the yeast on the loaf can be removed and replaced with baking powder for a softer texture.

NOTA: Hierdie Crescent roll deeg is heerlik sag en baie lekker om mee te werk.
Het een gisteraand op die tafel gelos om te sien wat dit maak.
Was nog net so sag soos gisteraand.
Het alreeds weer deeg aangemaak om ietsie te maak.
Ek het nie my deeg oor na laat staan nie net so twee na drie ure laat staan en was heerlik
CRESCENT ROLL DOUGH (IN THE BREAD MACHINE)
1 cup warm milk
1/2 cup butter, melted
2 eggs, beaten
4 cups flour
1/2 cup sugar
1 teaspoon salt
1/4 ounce active dry yeast or 2 1/2 teaspoons instant yeast
DIRECTIONS:
IN THE BREAD MACHINE
Place ingredients in bread machine in above order and choose the dough cycle.
Divide the dough in half.
Roll each half into a 9" round circle.
Spread some softened butter onto each circle (if desired) and cut each circle into 8 or 12 pie-shaped wedges, depending on the size of roll you want.
Starting with the wide end, roll up each wedge.
Place on greased baking pan, cover with a cloth and let stand for about 2 hours until roll has doubled in size.
Bake at 375 for 12 minutes.
WITHOUT BREAD MACHINE
In a large bowl, mix together yeast, milk and sugar. Let stand for 30 minutes.
Mix eggs, butter and salt into yeast mixture.
Mix in flour, 2 cups at a time.
Cover with wax paper and let dough stand at room temperature overnight.
In the morning, divide the dough in half.
Roll each half into a 9" round circle.
Spread cutter on circle and cut each round into 8 or 12 pie-shaped wedges.
Roll up each wedge starting from wide end.
Place on greased cookie sheets and let stand until ready to bake. Bake at 375 for 12 minutes.
TO FREEZE:
Roll up each wedge, place on a greased baking pan (cookie sheet) or on greased wax paper.
Place pan in freezer for about an hour. When dough is frozen, put into freezer safe Ziplock bags.
To bake, remove rolls from bag, place them on a greased baking pan to defrost and to give time to rise (about 2 hours). After dough has doubled, bake at 375 for 12 minutes.
Preparation time does not allow the 1 1/2 hours dough cycle or 2 hours needed to rise.

ROGHAWERMOUT BROOD
Ek het voorheen my rog-hawermout resep gelaai. Dit was egter vir ‘n medium brood en die was net heeltemal te min vir ons. So hier is die resep vir ‘n groot (2lb/900g) brood. Vars uit die broodmasjien eet ons dit sommer maklik in een sitting op. Op die oomblik is dit die brood wat ons die meeste bak.
Bestanddele:
400ml water
2 eetlepel olie
1 groot eier
1 1/2 teelepel sout
2 eetlepels suiker
150g growwe rogmeel
150g fyn rogmeel
150g hawermout (fyn gemaal in die voedselverwerker)
45g Maizina (mielieblom)
7g kits gis (vir broodmasjiene)
Gooi alles in die volgorde die broodmasjien en meng eers self.
Kies dan die “whole wheat” siklus vir ‘n 2 pond broodjie.
As die siklus klaar is bak die brood vir ‘n verdere 30 minute op die “extra bake” funksie. (En toets dat dit deur gaar is voor jy die siklus stop)
En vir variasie:
Die 150g fyn en growwe rogmeel kan vervang word met 300g fyn rogmeel, maar dan benodig jy 430ml water.
Week 2 opgehoopte eetlepels linsaad (flaxseed) in ‘n bietjie water vir ten minste ‘n uur (of sommer oornag) en voeg dit by die brood
Voeg 2 opgehoopte eetlepels anys saad by. Dit gee dit ‘n heerlike anys geur, sonder dat dit ‘n sterk anys snaak het.
Voeg 2 eetlepels kakao by vir ‘n donkerder brood.

SUIWER ROG BROOD
Vanweë kroniese sinus-probleme moes ek alle koring-, suiwel en suiker uitskakel. Kortweg, brood was UIT. Ek het hieroor gesels op my kuierwerf , en so 'n rog-broodjie resep gekry. Die persoon by wie ek dit gekry het het dit iewers op die internet gevind, maar hy kon nie onthou waar nie. Hy het egter reeds die resep aangepas vir ons SA toestande en die optimale resep vir sy broodbakmasjien gevind.
Plaas die bestanddele in die gegewe volgorde in die mengbakkie van die masjien:
2 eiers
1 k warm water (so teen 40ºC)
2 e olie (ek gebruik olyfolie)
2 e molasse (ek gebruik heuning)
2 ½ k rogmeel
¼ k mielieblom (Maizena)
2 t lesitien (ek het dit nog nooit bygevoeg nie)
1¼ t sout
1 pakkie droë gis
Gebruik die verstelling vir 'n volgraan broodjie van 1kg op die masjien (Wholewheat basic) sodat die totale tyd sowat 3h40min is. (op my masjien is die tyd 3h15min)

6 eetlepels olie (ek het olyfolie gebruik)
2 eiers
450g glutenvrye meel
1 teelepel sout
2 eetlepels suiker
2 teelepels gis
Meng melk, olie, eiers en asyn saam en gooi in die broodmasjien pan.
Voeg die meel, sout en suiker by en meng met ‘n lepel.
Sprinkel die gis bo-op.
Sit die masjien op die basiese/normale brood program. Ek het die 1.5 pond funksies gebruik.
Na dit vir ‘n paar minute gemeng het skraap die kante van die pan.
Ek het nie die mengspaan verwyder na die meng nie (gluten-vrye resepte rys glo beter as jy dit inlos en eers uit die gaar brood haal)
Laat die masjien verder die res doen.
En probeer dan geduldig vir 3 ure wag terwyl die geur jou en die kinders gek maak.
